- Use 2.5g of tea per 200ml of water — don't overpack the strainer. Leaves need room to unfurl.
- Steep for 2 to 3 minutes — set a timer. Over-steeping creates bitterness.
- Remove the leaves immediately — pour, sit, breathe, drink.
And one rule worth remembering: skip the milk for First and Second Flush. Milk masks the very florals and muscatel notes that make Darjeeling worth buying.
